Caramel and Twix Cheesecake Recipe

I love cheesecake! Who doesn´t… I have tried many variations from berries to apples and honeycomb but the caramel one is the best one. And it is super easy to make.

 

You will need:

1 cup digestive biscuits crushed

¼ cup melted butter

¼ cup ground almonds

3 tablespoons brown sugar

1 teaspoon cinnamon

½ teaspoon nutmeg

2 packages soft cheese

2/3 cup sugar

2/3 cup double cream

2/3 cup crème fraiche

2 tablespoons flour

2 eggs

½ tablespoon vanilla extract

1 tin of caramel

What to do:

Preheat your oven to 175°C. In a bowl, mix together biscuits, almonds, sugar, cinnamon, nutmeg and butter. Put this mixture in a baking form and press down to create a nice thin layer. Bake for 10 minutes.

In a large bowl, mix together soft cheese and sugar. Mix in double cream and crème fraiche. Add flour and vanilla extract and mix properly. Add and mix in eggs one by one. Pour this mixture over the biscuit layer and bake for 60-70 minutes. You might need to reduce the heat later, if the cheesecake starts getting golden brown (reduce to 155-160°C).

Let the cheesecake cool down a bit. In the meantime, Heat up a tin of caramel (or less if you only want a very thin layer). Add a splash of milk to make it a bit runnier (you can skip this step if you like). When the caramel is easy to work with, spread over the top of cheesecake. Decorate with Twix – whole or cut.
